The beginning of the XXth century and the Roaring Twenties forever marked the history of Montparnasse. All intellectual and artistic life was found in this mythical district which exalted bohemian life The high places of Montparnasse thus welcomed the most prestigious figures of the time, from Picasso to Modigliani, via Cocteau, Trotski or Fitzgerald. It is in this very rich historical context that the Bouillon Chartier Montparnasse takes place. The evolution of the restaurant is inseparable from that of the neighborhood. Created in 1858, it was bought in 1903 by Edouard Chartier but it was in 1906 that major works were undertaken to give birth to this sumptuous Art Nouveau decor: glass roof in shimmering colors, mirrors surrounded by woodwork, long railing in ornate wood and soft light. In 1924, the Bouillon Chartier was sold, became the Bouillon Rougeot and remained so until 1977. Since then, the restaurant has gone back through the ages without losing its authentic charm and was finally listed in the lists of Historic Monuments on July 16, 1984. Finally, in 2019, it is the renaissance of the Bouillon Chartier Montparnasse, which returns to its original vocation, offering a meal worthy of the name at a low price.
