Chef & Owner Chalisa Weippert was born and grew up in Surin a small village in Eastern Thailand not far from the Cambodian border. The oldest of six children Chalisa spent time with her siblings, parents and grandparents working on the family rice farm. Members of her family still work that family farm. At 16, Chalisa moved to Bangkok where she took a job prepping fresh food in a Thai restaurant. Over the next 18 years she worked her way up in the restaurant as a server, dining room supervisor and Captain and finally completed her apprenticeship as a Thai Chef.   Since her years in Bangkok, Chalisa has worked for several other restaurants as a chef. First in Kosovo, Yugoslavia and then notably she owned and operated her own Thai Restaurant in Kabul, Afghanistan. Since moving to the United States in 2006, Chalisa has worked as a manager and chef in several Northwest Thai restaurants. Chalisa’s passion is cooking. She loves spending time enjoying delicious food. Chalisa’s culinary accomplishments in part are due to the memories made in the kitchen and over meals shared with family and friends. She believes in preparing fresh, nutritious meals without sacrificing flavor and variety. Wandering Hop is a brewery inspired by a love of craft beer and a passion for traveling. We currently operate a 3.5bbl brewhouse for our staple beers and a 1/2bbl pilot system for our experimental brews. Our taproom is located at 508 N. 20th Ave in the heart of hop country, Yakima Washington. Wandering Hop was founded by Sonny Cooper and Nathan Cooper in May of 2015 when the idea was born. The Pilot System from MoreBeer was delivered in June of 2015. Since then, the Brewsculpture has turned out over 150 batches and continues to be used 3-4 times a week to produce small batch experimental brews. In April of 2016 we purchased our current location and began demolition and the massive remodel. After 17 months of electrical, plumbing, roofing, framing and cosmetic work, we officially (and secretly) opened our doors on September 22, 2017. While the taproom isn’t the final representation of our dream, it’s a good start and gives visitors an idea of our direction and future plans. The beer we brew is inspired by our travels and experiences we’ve shared with family and friends. We keep a variety of beer on tap from heavily hopped IPA’s to Imperial Stouts, Ambers, Pales and Seasonal Favorites. Our motto is “we’re going places” and that will always remain true as we constantly seek out new adventures, looking for inspiration to bring back to our customer’s glasses. The fruit that is used in Tieton Cider Works cider comes from Craig and Sharon Campbell’s Harmony Orchards. This land has been in our family since the 1920’s when our grandfather planted his first trees in Tieton, Washington.  As a third generation Yakima Valley farmer with a degree in horticulture from Washington State University and over thirty five years’ experience in marketing produce, Craig has always been curious about the history, production, science, and industry of food. Growing different varieties of trees is truly what makes Craig happy and he is always looking for new varieties to plant and nurture.   In 2008 he was introduced to cider apple varieties, those gnarly, inedible wild apple varieties needed to make great cider.  He planted twenty five varieties in a test block of two acres to study the growing patterns: did each fit into the existing bloom and harvest schedule of the farm, what were the flavor profiles of the fruit and how did that variety add to the cider that we wanted to make. We now have the largest acreage of cider apples and Perry pears in the state of Washington with 55 acres. A love of land, food and drink has inspired us to make cider with the fruit we are growing at our ranch. They downloaded Beer Smith and made some of their own creations and heard lots of positive comments about their product. This brought the two guys and their wives, Kristina and Jessa, to a crazy idea… What if the four of us opened our own brewery? THE WHEN A couple of years later, Nate and his wife graduated chiropractic school and moved to Yakima to open their chiropractic practice. Soon after, the guys broke out the brewing supplies and started making beer together…. Lots of beer. After only one extract batch, they decided to make the jump to all grain brewing. They tried brewing a couple of kit recipes and then decided to move on to their own. From there, the idea of a brewery started to take form, it would be called 5th Line Brewing. For all of those guys and gals out there who aren’t the best, but love the games they play, and the teammates they play with. This led to numerous discussions of if this brewery dream could be a reality, typically over beers, often accompanying hockey games, but that is beside the point. THE HOW After lots of talk and dreaming between the couples it was agreed that with the passion and quality of beer the guys were putting out that this could become a reality. This is where the story really comes together. These two hockey loving families, put everything on the line to dive into the craft beer business, and in the 5th Line spirit they did it because of the love of  brewing and their willingness to work hard no matter what. THE WHY We love beers with lots of great flavor and character. We strive to only create products that embody our passion for what we do. We may not be flashy stars of the beer world, much like we are not flashy on the ice, but we put in the work, and love, to create something that we feel will make the craft brew team (market/industry) just a little better.
