He's been bringing a democratized version of his eponymous restaurant through several Sugarfish locations for the past few years, and just opened up another outpost on 1st and La Brea. Every day inside the glass-enclosed Fossil Lab, scientists and volunteers prepare fossils including “Zed,” a recently discovered male Columbian mammoth.
