We will meet up at the kitchen at 2pm where I will have snacks and cold drinks for us to share. After brief intros we will wash up and get busy! Each student will have knives and tools on their workstation and I will demo each step, sharing my kitchen hacks and chef tips along the way. I would encourage you to ask me any questions you may have about cooking technique, recipe ideas, plating tips, etc. during class time..the goal is for us all to learn and walk away with some excellent recipes. The menu can and will change, depending on the seasons but I will focus on* traditional and local flavors*. Please note that most Puerto Rican cuisine is dairy and gluten free and I can provide strictly vegetarian/vegan classes for groups of 4 upon request. In our three hours, we will prepare a main course, side dish, and a specialty item (fresh drinks, dessert, appetizers) and enjoy them together at the end of class. Here are some of my favorites that we may cover: EMPANADILLAS- Flaky empanada dough stuffed with seasoned ground beef or crab AGUACATE RELLENO CON BACALAO - Avocado stuffed with cool and refreshing salt cod fish salad (peppers, onion, tomato, lime, herbs, root vegetables) ASOPAO DE GANDULES- Rice and pigeon pea stew with pumpkin and coconut milk SOPA DE POLLO CON MOFONGO- Super traditional, all healing Puerto Rican chicken soup with bright herbs, root vegetables).
Hola! I am Santana, a trained chef and culinary instructor. I am a graduate of the Institute of Culinary Education in New York City and a Food Network "Chopped" champion. I have worked in restaurants and media test kitchens in New York City and I host pop-up dining events all around the United States: NYC, LA, DC, Chicago, Atlanta...and San Juan. I am VERY passionate about food and cooking and have launched my own webseries, "I'll Cook Like Your Mother", where I share my favorite recipes and eating adventures. I was not raised in Puerto Rico, but I have Puerto Rican roots and I was raised on Puerto Rican cuisine. I LOVE our cuisine and I'm sure you will, too :)

We will be cooking in my home kitchen, both indoors and outdoors. Each student will have their own workstation and stove eye to work off of.
