Take Ceintuurbaan untill the bridge above Amstel river. Cross the bridge and walk on the other side (weesperzijde) towards citycenter. Pass several bridges with amazing vieuws, untill you reach the National Opera&Ballet hall.

Take the (free) ferry behind central station and have a look at the cityskiline from the beautiful terrace of Eye Filmmuseum
If you take the ferry to NDSM you have a different veuw. Many restaurants and interesting places over there as well (noorderlicht, pllek, ndsm terrein)
