Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this Masterpiece of Italian culinary tradition. On Request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price
Other things to note
The aging process requires cold temperatures in winter and hot in summer so be prepared with the appropriate equipment. Don't forget the photo/video camera.

15 km from Modena/35km from Bologna; with Google maps it's easy to reach me.when You'll be at 150mt from my place you'l find 2 small roads. keep your right hand side, the small road with trees and after 150 mt you'll be in front of my gate. After parking the visitors can enjoy the visit the place where I keep my barrels for my aged Balsamic Vinegar(Acetaia), located 20mt from the main building.... and start to enjoy Balsamic Vinegar......

We learnt a great deal about balsamic vinegar and it’s making and we came away with a new appreciation for it. Guido has tremendous passion and he is extremely warm and welcoming. We wanted to have an experience with a food producer in modena area and this was definitely it.

The time with Guido was a unique experience. He not only brought us closer to the traditional preparation of balsamic vinegar, but also completely changed our perspective on it. Everyone who wants a special experience apart from the usual tourist experiences has come to the right place. We can only highly recommend Guido and are already looking forward to the next visit to him, we will definitely see balsamic vinegar with different eyes! thanks Guido :)

wenn der Region um Modena ist, der sollte unbedingt an diesem Erlebnis teilnehmen! Die Leidenschaft und Freude, die Guido in seine Produkte steckt in unfassbar. the passion and thoughtfulness of Guido was noticeable, and the experience was absolutely incredible. It's not only about the amazing ability to teach and transfer knowledge, but also about the story behind the viniger and the importance of it, as well as an incredible culinary experience. Where do I even begin!! Guido is fantastic and clearly passionate about the art of making balsamic vinegar.
